A healthy, high-protein lemon garlic chicken & veggie skillet that cooks in just 15 minutes! Fresh, bright, and perfect for busy days.

Ingredients

  • 1 large chicken breast, sliced into thin strips

  • 1 tbsp olive oil

  • 1 cup broccoli florets

  • ½ cup cherry tomatoes

  • 1 small zucchini, sliced

  • 2 garlic cloves, minced

  • Juice of 1 lemon

  • ½ tsp paprika

  • ½ tsp Italian seasoning

  • Salt & black pepper to taste

  • Optional: fresh parsley for garnish

Directions

  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken, paprika, Italian seasoning, salt, and pepper. Cook 3–4 minutes until lightly browned.
  • Add garlic and stir for 30 seconds until fragrant.
  • Add broccoli, zucchini, and tomatoes. Cook 5–6 minutes until veggies are tender.
  • Squeeze lemon juice over the skillet, toss well, and serve warm.

Notes

  • You can swap chicken for shrimp or tofu. Add chili flakes for heat. Serve with quinoa or brown rice for a fuller meal.
